Healthy Eats for Spring!

Well, it’s official, Spring has sprung! For some reason, being outside always makes us want to chomp on something yummy, but at the same time we are trying to be frugal with what we eat since we all want that “summer body.”

I’m going to be updating this often with new recipes that I have come up with that are; healthy, fun, delicious and spring ready!

This week, I experimented with plain iceberg lettuce. Salads are always good for you, but can sometimes get boring and dull. I switched it up a bit this week by adding Pico De Gallo for dressing as well as the tomato effect. I also added red, green, and orange bell peppers (chopped); not only do bell peppers all have different delicious tastes, but they also add color in a salad that we all love to see in the spring-time! I added pieces of tortilla chips to give it an extra crunch, and even added a little bit of grilled chicken! It was delicious and so easy to make!
